Ingredients for Christmas Cake
150g Eggs (5.29 oz)
100g Sugar (3.53 oz)
90g Cake/Pastry Flour (3.17 oz)
(Please use Cake Flour if you can. Pastry flour is fine
but Cake Flour is better for its lower protein content.)
15g Unsalted Butter (0.529 oz)
1 tbsp Milk

- Soaking Syrup -
2 tbsp Sugar
3 tbsp Hot Water
1 tbsp Kirsch - a type of brandy made from fermented cherries

- Toppings -
400ml Whipping Cream with 35% fat (1.69 u.s. cup)

Miso Ramen Recipe 味噌拉麵食譜

Ingredients for Miso Ramen (serves 1) /味噌拉麵配料(1人)
1 package of Instant Ramen Noodles, Miso /1包方便麵,味噌
2~3 Thin Pork Loin Slices /2~3個瘦豬肉里脊片
1 Large Garlic Clove, Chopped /1個大蒜瓣,切碎
80g Cabbage (2.8 oz) /80G白菜(2.8盎司)
70g Moyashi Bean Sprouts (2.5 oz) 7/0克MOYASHI豆芽(2.5盎司)
¼ tsp Doubanjiang - Chili Bean Paste /¼茶匙Doubanjiang - 辣椒豆瓣醬
½ tsp Miso /½茶匙味噌
½ tsp Soy Sauce /½茶匙醬油
½ tsp Oyster Sauce /½茶匙蠔油

Chocolate Bars 巧克力條

Dark Chocolate Peanut Butter Bars
黑巧克力花生醬條

Dark Chocolate:
2 cups coconut oil
1/2 cup Vermont maple syrup
1/2 teaspoon salt
1 cup cocoa powder
Peanut Butter Filling:
1 1/2 cups natural peanut butter, room temperature
8 tablespoons unsalted butter, room temperature
1/2 cup Vermont maple syrup
1/4 teaspoon salt (a bit more if you don't use salted peanut butter)

Instructions:
Melt coconut oil in double broiler with maple syrup and salt. Sift in cocoa powder and stir well until mixture becomes smooth and dark.
Line a 9-inch square glass dish with plastic wrap. Pour half the chocolate mixture into the dish and place in freezer until hard, 20 to 30 minutes. Meanwhile make peanut butter filling.
Using a stand mixer with whisk attachment, beat peanut butter and butter about 5 minutes, until mixture is fluffy. Beat in maple syrup and salt.
Once chocolate layer is frozen, spread peanut butter filling over top. Place in freezer until firm, about 30 minutes.
If remaining chocolate mixture has hardened, reheat to make it liquid again. Once peanut butter filling is firm, pour over remaining chocolate mixture.
Place in freezer 30 more minutes or longer.
When you are ready to cut into squares, remove dish from freezer and allow it to sit on the counter about 10 minutes and then lift up the plastic wrap, which allows for a little easier release. Cut into very small squares as this is quite rich.
Refrigerate squares, as coconut oil is very soft at room temperature. Remove from fridge about 10 minutes before you want to eat one to allow it to soften up a bit.

Sweet Potato Rice Dumplings 紫薯水晶粽

Sweet Potato Rice Dumplings for Dragon Boat Festival
吃紫薯水晶粽過端午節
今年的端午節是六月十二日這漂亮的紫薯水晶粽定會很搶手啊!


紫薯水晶粽製作過程:
1、準備材料: 糯米、紫薯、粽葉、白糖、食用油
2、粽葉放沸水里煮兩分鐘撈起沖洗乾淨,這樣不容易斷裂
3、紫薯去皮切成片放鍋裡蒸熟
4、將蒸好的紫薯壓成泥,加適量白糖和熟油拌成紫薯餡
5、將紫薯餡捏成一個個小團狀
6、糯米用水打濕瀝乾備用,不要浸泡
7、取兩片粽葉剪去根部,一前一後重疊在一起
8、捲成漏斗狀,裝入少量糯米
9、放入一粒紫薯餡團
10、再蓋上一層糯米,用勺子壓實
11、用手指按壓粽葉邊,將上面的粽葉折下來蓋住米料
12、將兩邊折角
13、用手指按緊兩邊的粽葉,長出的粽葉反折到邊上
14、用棉線綁紮好粽子
15、包好的粽子放鍋里中大火蒸20分鐘即可
16、剝開粽葉張大口享用!
註:把材料中的紫薯換成喜歡的材料就可作出不同口味的粽子。

Directions:
Fill glasses with ice cream. Pour in 1-2 shots of bourbon (or lots more or skip it). Pour in soda.
Drink. Enjoy!

Turkey & Mango Wrap 火雞芒果卷

Hidden Valley Spicy Chipotle Pepper Smoked Turkey, Mango Wrap (From Relish Blog)

Ingredients
1 (9-inch) flour or whole wheat tortilla
2 teaspoons Hidden Valley Spicy Chipotle Pepper Sandwich Spread n Dip
2 slices smoked turkey
2 slices cheese
3 tablespoons chopped fresh or thawed frozen mango
1 tablespoon chopped cilantro
½ tablespoon finely chopped red onion
1 Romaine lettuce leaf

Instructions
1. Spread the Spicy Chipotle Pepper Sandwich Spread n Dip evenly over the tortilla. Sprinkle with red onion.
2. Place the smoked turkey slices on top of the red onion. Sprinkle with chopped mango and cilantro; top with the cheese slices. Place the lettuce leaf in the center of the wrap.
3. Roll the tortilla up, using your fingers to gently tuck any loose fillings back into the tortilla as you roll. Slice in half with a serrated knife and serve immediately.

Ingredients:
4 Cups cooked and cubed Chicken
2 Tbsp. Lemon Juice
1 Cup Mayonnaise - gluten free
1/2 Teaspoon Salt
1 Cup Pineapple Tidbits
1 Cup Red Grapes, cut in half
1 Cup Slivered Almonds

Directions:
"Toss chicken with the lemon juice until coated. Chill for one hour. Add remaining ingredients and chill thoroughly. Serve over lettuce, or on sandwich bread with a sprinkling of parsley.

Chicken Enchiladas 雞片捲餅

Chicken Enchiladas 辣雞肉片捲餅
Ingredients: for 4 servings
1 tbsp olive oil
1 small yellow or white onion, chopped
1 large jalapeño, seeded and chopped
1 large clove garlic, chopped
1 15oz. can tomatoes, chopped
1 4oz. can green chile peppers, chopped
2 cups baby spinach leaves
2 6oz. chicken breasts, cooked, thinly sliced
½ tsp oregano
½ tsp salt
¼ cup reduced-fat sour cream
2 cups shredded part-skim mozzarella cheese
8 small whole grain flour tortillas
non-stick cooking spray

Directions

Coat a 8x12 baking dish with cooking spray. Set aside. Preheat the oven to 400° F.
Heat a large skillet over medium-high heat. Add olive oil. When oil is hot, add the onion, jalapeño and garlic. Cook seven-eight minutes, stirring occasionally, until the onions begin to soften but does not turn brown. Add the tomatoes along with their juices, spinach, chicken, oregano and salt. Stir until the tomato juice coats the chicken and spinach.

Wrap ½ cup of the chicken mixture in each tortilla. Lay the tortillas seam-side down in the baking dish. Spoon the sour cream over the tops of the tortillas and sprinkle with cheese.

Bake 10-15 minutes uncovered until the cheese begins to brown and the filling is warm. Serve immediately.(源自 Source: Health Monitor)

原料:
餃子粉300克、豬肉餡250克、野菜150克、菠菜汁190克(清水250克菠菜80克攪打成汁)、酵母6克
調料:
蔥末2大勺、薑末1/2大勺、生抽醬油1大勺、鹽1.5小勺、雞精1小勺、香油1大勺、五香粉1/2小勺、橄欖油6大勺
做法:
1.準備原料。
2.菠菜用開水燙一下撈出,放在涼水里過涼後瀝乾水分。
3.把菠菜切碎,加250克清水攪打成汁,我沒過濾,直接連水帶菠菜渣一起和麵,免得營養都被扔掉。
4.麵粉放入麵包機桶中,把菠菜汁攪一攪,取190克,倒入麵粉中。
5.麵粉上挖個小坑,把酵母倒進去,再用麵粉蓋上。
6.用筷子稍微攪拌至沒有乾粉狀,免得啟動機器時干粉四濺。
7.選擇麵包機的發麵程序,機器顯示1:40分鐘,表示全程需要1小時40分鐘,蓋上蓋子,啟動機器,機器開始和麵。
8.20分鐘後和麵結束,機器顯示為1:20,麵團已經很光滑了,進入發麵階段,發麵20分鐘後(機器顯示為1:00),機器會有個排氣攪拌的過程,無須理會,就讓它自己在那折騰吧。發酵的時候最好在麵包桶上蓋個保鮮膜或者濕布,防止麵團表面乾硬。
9. 繼續發麵1小時候後整個程序結束,麵團發酵完畢,鼓鼓滴,然後取出麵團用手稍微揉一下,滾圓蓋上保鮮膜鬆弛15分鐘。
10.肉餡加入所有調料攪拌均勻備用。
11.野菜摘洗乾淨,用開水焯一下撈出,然後過涼水瀝乾水分。
12.把野菜剁碎。
13.把野菜放入肉餡中,再倒入3大勺橄欖油把野菜拌一下。
14.然後把野菜合肉餡混合拌勻。
15-16.麵團鬆弛好後下成小劑子,滾圓。
17.再擀成中間厚邊緣薄的皮。
18.放入適量餡料。
19-20.分別包成圓形和柳葉型的包子,放在案板上醒發20-30分鐘以後再蒸。
21.在蒸屜上刷上薄薄一層植物油。
22.放入醒發好的包子生坯,冒汽後用中火蒸15分鐘後關火,不要馬上打開鍋蓋,燜4-5分鐘再起鍋。
經驗分享:
菠菜含有對身體不好的草酸,所以在榨菠菜汁前要將菠菜焯水,這樣可以去掉大多是草酸。菠菜渣也是很有營養的東西,和麵的時候最好不要丟掉。
和麵的水量最好不要一次性都加進去,預留10-15克進行調節麵團的鬆軟。我加了菠菜渣進去所以液體的比重比較大,如果單純用清水165-170克差不多。
野菜一般比較苦澀,所以焯水也是必須的,野菜剁好後最好用油先拌一下再與肉餡混合,這樣野菜的口感會好很多。
剛作成的生包子一定要經過20-30分鐘的醒發才能蒸,蒸好後也不要馬上出鍋,燜5分鐘再出鍋包子就不會回縮。其顏色漂亮!

Spinach Salad 菠菜沙拉

Spinach Salad with Walnuts and Strawberries
Makes 4 servings
四人份核桃草莓菠菜沙拉


Ingredients
½ cup walnuts 核桃
4 cups fresh baby spinach, stems trimmed, coarsely chopped 菠菜
8 large strawberries, thinly sliced 草莓
¼ cup balsamic vinegar 醋
3 Tbsp honey 蜂蜜
2 Tbsp spicy brown mustard 芥末
¼ tsp sea salt 盬
¼ cup (1 oz.) crumbled feta cheese 酪汽士 (optional)

Directions
Preheat the oven to 375°F. Place the walnuts on a rimmed baking sheet and bake until fragrant and toasted, about 8 minutes. Transfer to a plate to cool.
Toss the spinach with the strawberries in a large bowl. Whisk the vinegar, honey, mustard and salt in a small bowl. Drizzle three-fourths of the dressing over the salad; sprinkle the walnuts on top. Serve sprinkled with cheese, if desired, and with the remaining dressing on the side.

一直沒想好這道菜的菜名

材料:一個菜椒(黃色),一個尖椒(綠色),一個西紅柿(番茄),四個雞蛋,一根火腿腸,還有適量的蔥薑蒜。
1、把雞蛋打勻。
2、把菜椒切塊。
3、拿一個空碗,把西紅柿用刀削進碗裡,這樣可以防止西紅柿的汁流失掉。
4、把尖椒切了,和菜椒放在一起即可。
5、先把雞蛋炒熟,然後鏟出另放。
6、放入適量的油,開始翻炒西紅柿。
7、等到西紅柿的汁出來的差不多了,就倒入蔥薑蒜、菜椒和尖椒進行翻炒。
8、然後放入炒熟的雞蛋,翻炒兩三下。
9、加入適量的鹽進行翻炒。
10、放入切好的火腿翻炒三四下。
11、最後放入其他佐料,即可出鍋,這樣這道菜就完工了。

材料:
低筋麵粉100克,燕麥片35克,葡萄乾45克,泡打粉1/4小勺,小蘇打粉1/4 小勺,肉桂粉1/8小勺,雞蛋30克,色拉油65克,細砂糖50克,紅糖20克。
Materials:

做法:
1. 碗內倒入植物油,打入雞蛋,在加入紅糖和細砂糖。

4. 把上一步混合好的粉類倒入“2”中。
5. 用橡皮刮刀拌勻成為均勻濕潤的麵糊。
6. 取一小塊麵糊,搓成圓球形,再壓成圓餅型,排入烤盤,放入已預熱好的烤箱中層,上下火170度,烘烤15-18分鐘。
