Tomato Beef With Potato 番茄薯仔燉牛肉

番茄薯仔燉牛肉

食材:
牛肉300g
洋蔥半顆
馬鈴薯1顆
牛番茄1顆
調味料:
紅酒100c.c.
鹽適量
配菜-和風醬茄子
茄子1支
和風醬油5c.c.
柴魚醬油5c.c.
燒肉醬5c.c.
配菜-柴魚海帶絲
海帶絲100g
柴魚10g
柴魚醬油少許
配菜-豆腐粉絲煲
冬粉1把
傳統豆腐1塊
豆瓣醬10g
1 先煮一鍋熱水,水滾後將切成小塊的牛肉先煮5分鐘,撈起過冷水後備用。
牛肉要先以熱水煮過,時間不宜過短,以去除部分牛腥味及雜質。
2 將馬鈴薯切成約3公分大小的塊狀、洋蔥也切成3公分大小塊狀,把番茄切成約2公分左右塊狀。起一油鍋約160℃,將馬鈴薯與洋蔥一起下鍋炒香。
3 將煮過的牛肉下鍋,加水50c.c.,拌炒約5分鐘。
4 再把番茄下鍋一起翻炒, 加水約100c.c.,蓋鍋蓋煨煮10分鐘。
5 加入紅酒再燜煮約20分鐘,最後加鹽即可。

燜煮10分鐘後可以筷子觀察肉的軟硬程度,想吃軟一點的,可以多加水100c.c.再燜煮10分鐘。

Fried Rice Noodles 大鍋炒米粉

炒米粉的大鍋炒技巧
就是媽媽味!

1. 乾燥米粉在料理前,一定要完全浸濕,需30分鐘,可用手檢查,泡濕的米粉觸感摸來較為柔軟且透亮。
2. 先將家人喜愛的炒米粉配料,如高麗菜絲、肉絲、紅蘿蔔絲、蔥絲等完全炒熟,倒入水分與搭配醬料,如醬油、白胡椒粉,製成一鍋炒料備用。
