Italian Cold Crab Noodle 蟹肉義大利冷麵

蟹肉義大利冷麵

食材
蟹肉50g
義大利細麵100g
美國芹菜30g
橄欖油1匙
紅蘿蔔20g
調味料
海鹽少許
白胡椒粉少許
蜂蜜芥末醬50g

取1公升水約加入30g鹽煮開，放入義大利麵煮熟，麵撈起後立刻拌上橄欖油、放冷備用。

以鹽水煮義大利麵可增加風味。煮熟的熱麵條拌橄欖油可避免黏糊在一起。

美國芹菜、紅蘿蔔切細條，與蟹肉一起放入煮開的鹽水中汆燙熟、撈起放涼。

義大利麵加海鹽、白胡椒粉、蜂蜜芥末醬拌勻、裝盤，上面擺芹菜及紅蘿蔔絲等蔬菜及蟹肉即可。

Tomato Beef With Potato 番茄薯仔燉牛肉

番茄薯仔燉牛肉

食材:
牛肉300g
洋蔥半顆
馬鈴薯1顆
牛番茄1顆
調味料:
紅酒100c.c.
鹽適量
配菜－和風醬茄子
茄子1支
和風醬油5c.c.
柴魚醬油5c.c.
燒肉醬5c.c.
配菜－柴魚海帶絲
海帶絲100g
柴魚10g
柴魚醬油少許
配菜－豆腐粉絲煲
冬粉1把
傳統豆腐1塊
豆瓣醬10g
1 先煮一鍋熱水，水滾後將切成小塊的牛肉先煮5分鐘，撈起過冷水後備用。
牛肉要先以熱水煮過，時間不宜過短，以去除部分牛腥味及雜質。
2 將馬鈴薯切成約3公分大小的塊狀、洋蔥也切成3公分大小塊狀，把番茄切成約2公分左右塊狀。起一油鍋約160℃，將馬鈴薯與洋蔥一起下鍋炒香。
3 將煮過的牛肉下鍋，加水50c.c.，拌炒約5分鐘。
4 再把番茄下鍋一起翻炒， 加水約100c.c.，蓋鍋蓋煨煮10分鐘。
5 加入紅酒再燜煮約20分鐘，最後加鹽即可。

燜煮10分鐘後可以筷子觀察肉的軟硬程度，想吃軟一點的，可以多加水100c.c.再燜煮10分鐘。
